My very best side-dish recipe

I've been away from my computer several days, enjoying a visit from some out-of-town friends. Man, it was fun to have them here, but I've missed you all!

I made dinner Tuesday night that turned out really well (thanks be to God). I served Bacon-Wrapped Pork Tenderloin (recipe here). Now I want to share with you the recipe for one of the side dishes I made. Of all the things I ever cook, this is the recipe that is most often requested. This is the side dish to die for. This is one of those recipes that my mother got from a friend who got it from a friend who got it from another friend--you know the kind. Simple but oh-so-good. You should give it a try!

Baked Apricots

2 cans apricot halves, drained
1 1/2 cups crushed Ritz crackers
1 stick butter, melted
3/4 cup brown sugar

Spray a baking dish with non-stick spray. Place apricots, cut side up, in bottom of pan.

Mix crushed Ritz crackers, butter, and brown sugar together. Sprinkle mixture on top of apricots.

Bake at 300 degrees 35-40 minutes.

Oh, my word. These are melt-in-your-mouth good. They pair wonderfully with pork and poultry. My husband and sons like to spoon them over vanilla ice cream.

What's your favorite side dish?

I am planning on making your pork tenderloin recipe for my supper club/pumpkin carving party. Maybe I'll make this side dish to go along with it. It sounds great!

It sounds really yummy. It reminds me of the pineapple, cheese, sugar, and ritz dish that I make.

That sounds delish! I have never made anything with apricots before. Seriously.
This seems easy enough for me to even try. :)
